Merry Monday | 12.15.25

Happy Merry Monday!! This weekend was all over the place, but very festive. My job’s Christmas party was Friday, and since I was responsible for planning it finally getting to enjoy the party was fun and a relief. I had another Christmas party to go to on Saturday, but there were some holiday markets and events near me that I wanted to attend as well. I didn’t end up going to all of them, just one that was near my house. It was very cool and festive. There are businesses on the property it was at, so I went to different shops and there were some other vendors there as well. It was cool! I tried their hot toddy and it was potent but good.

The Christmas party on Saturday was given by a few engineering groups I’m a part of, so I got to see one of my best friends and a cousin who’s also a member. The party was fun and a nice social gathering of likeminded folks. I enjoyed the people who I met and chatting with my friend/family, and the food was pretty good too.

On Sunday, it was a chill day for me. I went to mobility/yoga class, then got a much needed pedicure. Then I made a sweet potato chocolate mousse with a bourbon banana foster from a Chopped themed conversation in a Veggie Lovers virtual workshop I attended a couple weeks ago. The basket given was sweet potato, beets, cocoa powder, and bananas. I experimented with shaving the beet and let it dry out, then added brown sugar to candy it. Well that needs a little more work, but the rest everyone said was good. I don’t like chocolate or bananas, but I love a challenge and I decided to put my culinary degree to use. It was fun and pretty simple actually.

The weekend was good, but I know the week will be busy leading up to Christmas. I’m going to make sure to practice self care and stay connected to my “why” as usual.
